brown rice and lentil pilaf with chilies

Ingredients
Olive Oil, 1 tbsp Onions, raw, 1 cup, chopped Garlic, 3 clove ,mincedChicken Broth 99% Fat Free, 1 canWater, 2 cupsLentils, brown,1 cupBrown Rice, 1 cup Curry powder, 1 tsp Cumin powder, 2 tspHot Chili Peppers,dried- 3 wholekosher Salt, to tasteground black pepper to taste
Directions
over medium heat in a medium saucepan heat oil. Saute onion till softened, about 3 minutes, add agarlic,chili peppers, and other spices then saute until fragrant, about 1 minute.Stir in rice and lentils.Add broth and water. bring to a boil then reduce heat to a simmer.Cover and cook for 45 minutes. remove chili peppers. season with salt and pepper and serve

    I make a recipe almost identical to this (minus the chilis) and we all really love it. It's hearty, filling, and very healthy. It easily feeds my family of 4 as the main dish with some left over for the next day's lunch. Try it, you'll like it! - 11/4/08
