Roma Soup

Ingredients
2 cans (15 0z) garbanzo beans, drained and rinsed2 slices of bacon cooked, drained, chopped1/4 cup olive oil3/4 cup onion chopped1 cup chopped celery1 small garlic clove minced1 cup julienne cut carrots1 can (14.5 oz) diced tomatoes4 cups chicken broth1/2 tsp black pepper1/8 tsp ground rosemary2 Tbsp fresh minced parsley
Directions
Add garbanzo beans to food processor and pulse until beans are well mashed. Scrape down sides of work bowl occasionally. Set aside. Heat oil in a dutch oven or stock pot. Add carrots, onions, celery and garlic and saute' for 5 minutes on meduim heat. Add remaining ingredients and bring to a boil. Reduce heat to a simmer and cook stirring occasionally for 20 minutes. Serve immediately.
