Bison Bolognese

Ingredients
1 tbsp olive oil1 lb ground bison2 carrots, diced1 medium yellow onion, diced1 green bell pepper, diced2 stalks of celery, diced5 cloves garlic, minced1 can diced tomatoes (28 oz)1/4 cup red winefresh oreganofresh basil saltblack peppercrushed red pepper
Directions
In a stock pot or dutch over, brown the bison in olive oil adding the carrots, bell pepper, celery and onion half way through the process. After the bison is browned and the carrots are somewhat soft add salt, pepper and crushed red pepper to taste. Add tomatoes and red wine, reduce heat to medium low and cover for 20-40 minutes adding the garlic with 10 minutes left to cook. Add fresh herbs before serving.

    I loved this recipe. Mine simmered for a full hour, and it had a deep, rich, delicious taste. Fabulous!

    My only issue is that I think this really only makes 4 portions - - not 6. Unless you are really light eater. - 11/4/08

    Yeah, you're probably right. I like my pasta or spaghetti squash light on sauce so it would probably make 4 portions if you like a higher sauce to pasta ratio.

    I love bison. That said, you could easily sub ground turkey or beef for that matter. I double up on the tomatoes and red wine and hot peppers but that's just my taste. Highly recommend bison if you can find it. - 11/3/08

    I added the garlic and onions with the beef (no bison), added mushrooms, added chicken stock instead of red wine and a bit more dried italian herbs. Plus, I didn't have canned tomatoes on hand so I used tomato puree and fresh diced tomatoes, and added a little water. - 3/25/11
