Classic Monte Cristo Sandwiches

Ingredients
4 slices firm white bread4 teaspoons honey mustard2 ounces very thinly sliced reduced-sodium cooked ham2 slices Sargento reduced-fat Swiss cheese1/4 C 1% milk1 egg whiteNonstick Cooking Spray1 tsp margarine
Directions
1. Spread one side of each bread slice lightly with honey mustard. Layer ham and cheese between the mustard-spread sides of the bread slices. Put together to make two sandwiches.
2. In a shallow bowl, beat together egg white and milk.
3. Coat an unheated nonstick griddle with cooking spray. Preheat griddle over medium heat. Melt margarine on griddle.
3. Dip each sandwich in milk mixture, turning to coat. Place on griddle; cook for 2-3 minutes on each side, or until golden brown and cheese is melted.

Makes two sandwiches.

    I found this recipe today for my step-dad who is a diabetic. I prepared these in under 10 minutes, cooked them in under 5, and ate them in under 2! LOL! These were really good.     I may have the same cookbook! I love this recipe! My recipe calls for 1 tsp of powdered sugar and low-sugar cranberry-raspberry jam (optional), but I rarely use them. Whenever I crave the FATTENING Bennigans version, I make these and it satisfies! =) - 4/27/09
