Buttercup squashBalsalmic VinegarPure Maple SyrupPasta of choice
The squash can be difficult to cut up, so allow time for it. Cube the squash and saute it. While the squash is cooking, boil the water for the pasta. Make sure to stir the squash often to keep it from burning. I used a little water in the pan, but you can use a little margarine or olive oil as well. Cook the pasta according to the directions once the water is boiling. Once the squash is fork tender, deglaze the pan with the balsalmic vinegar and stir to evenly coate the squash, then add the maple syrup. Drain the pasta and then return it to the pot, pouring the squash mixture over the pasta. Stir throughly to coat everything, then serve and enjoy
