1-3/4 cup White Whole Wheat Flour (King Arthur) 1/4 cup All-purpose white flour1/2 cup Granulated Sugar2 tsp Baking Powder1/4 tsp Baking Soda1/4 tsp Salt2 Large Eggs0.5 cup Honey1 cup Rice Milk Enriched Original (Rice Dream)0.5 cup Safflower Oil0.5 cup Cranberries, dried, sweetened (craisins)
Heat oven to 375. Mix dry ingredients (except cranberries). Mix wet ingredients. Stir together until batter is smooth. Add cranberries. Spoon into lined muffin tins. Cook 19-22 minutes. Transfer to wire rack to cool - 5 minutes. Makes 12 mufffins.
