1 pound lean ground turkey (93% lean)2C chopped onion1C chopped celery1C chopped bell pepper6 cloves chopped garlic2T olive oil1 can black beans2 can kidney beans1 can pinto beans2 cans diced tomatoes1 quart chicken brothChili powder to taste
I split this up into 8-2 cup servings and it still is low in calories, fat and high in protein!
Brown ground turkey in 1T olive oil, sautee onion, celery, bell pepper and garlic in 1T olive oil. Add remaining ingredients and simmer for 15 minutes or longer to taste. Add chili powder, salt and pepper to taste.

Made it! Very good! I cut the sodium by MORE than half w/no salt added beans, no salt diced tomatoes & fat free/reduced sodium chix broth. Plus I used Jennie-O 99% lean turkey w/more protein. Also, I drained & rinsed all the beans so I wasn't eating the GOOP they can in. Hubby loved it!! - 2/25/10
