Countryside Couscous

Ingredients
Directions
1 can (14- 1/2 ounce) fat-free vegetable broth1/4 cup water1 tablespoon dried minced onion1 teaspoon ground coriander1/2 teaspoon sweet paprika1/4 teaspoon each ground cinnamon and ground red (cayenne) pepper1/2 cup (2-1/2 ounce package) pine nuts1/4 cup each dried apricots and cranberries, chopped1 package (10 ounce) couscous (about 1-2/3 cups)2 tablespoons fresh parsley leaves, chopped
In medium saucepan, bring all ingredients except couscous and parsley to boil over high heat. Stir in couscous; remove from heat. Cover and let stand 5 minutes; stir in parsley.
Makes 8 (2/3 cup) servings.

This was SO delicious; the only thing it needs is some moisture. I'm playing with variations of olive oil, spread, and some healthy sauces. I served it with a little lean pork. My hubby and I are going to make it for our 5th wedding anniversary garden party. It is easy, fast, and inexpensive. - 3/1/09
