  • Number of Servings: 2
Ingredients
Ingredients (use vegan versions): 1 acorn squash sea salt cooking spray
Directions
Directions:

Preheat your oven to 425 degrees.

Use a vegetable peeler and peel the squash. Cut it in half and scoop out all the seeds. Slice up the squash into 1/2 inch thick-ish slices, Slice them again if you want them in a more fry-style shape.

Spray a cookie sheet with non-stick spray, put the squash on the pan and sprinkle with the salt.

Bake for 35-40 minutes or till they get a lil browned.

These ended up tasting allot like regular potato fries, not all sweet like sweet potato fries. My roommates and I really liked them allot and they went great with ketchup and also with a dip recipe that I have on this site that's pretty much half Veganaise, half ketchup and some fajita seasoning. Yay for simple and yummy recipes! (that are actually good for you)

I tried this tonight. It was really good! I would have never thought of cooking the squash this way, even though I cook summer squash similar to this. - 6/23/10

Very tasty! We used seasoned salt instead of the sea salt and it was a nice added flavor. - 7/18/10

I've done this one before! One of my favorites! Of course, any squash baked, grilled or cooked however you want to cook it gets my attention.

The heat and time depends on the oven/grill of course. I always test my squash for "done-ness" but this is a great recipe! - 11/6/09

These were great. Easy to change up the seasonings. I found that if you cut the squash in half, then cut each half into 6 or so steak fry sized pieces, you can easily use a vegetable peeler to remove the skin. Definitely a keeper - 10/14/19

Wish you'd share how you peeled your squash. - 7/20/14

Loved it, but suggest not using a vegetable peeler to remove skin as the acorn squash has crevices that could not be reached with a peeler. Almost cut myself trying to use peeler. Next time I'll use a paring knife. I used paprika, red pepper, sea salt, and cajun seasoning on mine. Better than fries! - 11/25/13

Wowzer...I was hesitant but absolutely delish! I did sprinkle season salt & chili powder on the fried. I baked too long & burnt some, but still tasted good. Even my husband liked them. - 11/16/13

I made these last night but without salt. YUMMY!! - 9/29/13

This was very easy and delicious. I did find it a bit difficult to peel the squash in between the deep grooves, so I only peeled as much as could be peeled when the squash was still whole.
I will likely make these again - and I'll probably try it with different types of squash. - 10/23/12

We loved this! I checked it early and it was already done but that is because we sliced them really thin. What a yummy substitute for french fries! - 2/20/11

35 mins burned almost all of them. The two I got to try were OK, probably better with some kind of sauce. - 10/8/09

This is the first time I've made acorn squash any way other than like mashed potatoes and it was really good! I'll definitely be making them again. I cut them pretty thin so it only took about 15 minutes. Next time, I'll end with a minute per side under the broiler to try to crisp them up. - 2/9/09

I had to lower the sodium content, and I actually sliced my strips too thin and some of them burned, but that's completely my own fault. I love this recipe and am definitely going to have to make it a couple times a month! Thanks!! - 12/28/08

Yes!!! As a general rule of thumb I try to stay away from potatoes, this is simply awesome!!! Mine browned alittle too much on the bottom. Was I supposed to flip halfway thru? Still completely awesome! - 11/17/08
