Banana Chocolate Chip Cake (low sugar)

Ingredients
3 very ripe bananas, mashed1/2 c unsweetened applesauce2 large eggs1 t vanilla3/4 c quick oats3/4 c whole wheat pastry flour1/2 t cinnamon1/2 t nutmeg1 T baking powder1/4 t stevia extract1/3 c chocolate chips
Directions
Add wet ingredients and mix in order given.
Combine dry ingredients in a small bowl, making sure that the stevia powder is well distributed.
Stir dry ingredients into wet ingredients.
Do not overmix after addition of flour.

Pour batter in a greased 8x8 pan, or in 12 muffin cups. Bake at 350° for about 25-30 minutes, or until a toothpick comes out clean.

    I made this into 3 mini loaves. I think my bananas may have been too big because almost too moist. Will try with just 2 large bananas next time. Still good! I substituted 1/4 C sugar for the stevia. - 10/26/12
