Cinnamon Pear Muffins (gluten free)

Ingredients
3 cups diced pears, peeled or not peeled1/3 cup lightly packed brown sugar1 Tbsp honey2 large eggs or egg white replacement equal to1/4 cup canola oil2 tsp vanilla extract1 1/4 cup oat flour1/2 cup regular oats1/4 cup coconut flour2 tsp baking soda2 tsp ground cinnamon1 tsp ground nutmeg1 tsp salt1 cup raisins
Directions
Combine the pears, sugar and honey. Allow to sit for a few minutes. Beat together the eggs through vanilla and add to pear mixture.

In a large mixing bowl, combine all the dry ingredients, except the raisins. Stir in the pear mixture, just until combined. Fold in the raisins.

Spoon batter into prepared muffin tins, filling cups full. Bake in preheat 400F oven for 20 minutes.

Makes 12 regular size muffins.

    Looks yummy! you could possibly cut the amt of salt & baking soda in half. Other fruits, such as apple or pumpkin would probably be good in place of the pear. - 10/17/09
