Crockpot Chicken and Apples

Ingredients
6 ounce can frozen orange juice concentrate1/2 teaspoon dried marjoram leaves1/8 teaspoon ground nutmeg2 garlic cloves, minced1 onion, chopped6 (24 oz) boneless skinless chicken breasts3 Granny smith apples, cored and slicedsalt and pepper to taste1 tablespoons cornstarch3/4 cup of quinoa or brown rice (not cooked)
Directions
In small bowl, combine thawed orange juice concentrate (do not use regular orange juice!), marjoram, and nutmeg. Place onions and garlic in bottom of 3-4 quart slow cooker. Dip each chicken breast into the orange mixture to coat and place in crockpot over onions. Pour any remaining orange juice mixture over the chicken. Cover and cook on low for 6 hours until chicken is almost cooked. Add apples and cook 40-50 minutes longer on low until apples are tender and chicken is thoroughly cooked.
Mix together water and cornstarch in a small bowl and stir into the juices in saucepan. Cover and cook on high heat, stirring occasionally, until sauce is thick and bubbly, 10-15 minutes. Serve the sauce over the chicken and apples.

Cook your qunioa while making the sauce and serve your chicken and apples over the quinoa.

    sounded good, but the oj was way too over powering, I think just skipping it would make a better dish and using some lemon and chicken broth instead - 12/14/14

    I made this tonight with a few variations. I replaced 1/2 the OJ with chicken broth, used lots of black pepper and some additional garlic (powder). I served it with the quinoa. I will make this again, easy, unique and hearty. I really enjoyed it. - 11/18/08
