* 1 lb. shrimp * 1 bunch fresh basil * 2 cloves garlic, minced * 3 red or green chilies, (serrano or fresh jalapeņo), seeds removed, thinly sliced * 4 green onions, white part minced; green part, in 1 inch cuts * 1 tsp. peanut oil * 1/4 cup plus 2 Tbs. chicken stock, defatted * 2 Tbs. fish sauce * 2 Tbs. soy sauce * 1 tsp. sugar * hot cooked rice

Wash and dry the basil; set aside. Heat a wok over high heat; add the oil and 2 Tbs. stock, the white part of the scallions, the garlic and chilies; cook for 10 seconds. Add the shrimp; stir-fry 20 seconds. Add the fish sauce, the soy sauce, sugar, remaining stock and the green part of the scallion; bring to a boil; stir in the basil; cook for 20 seconds. Serve with steamed rice.
