Warm You Up Chicken Tortilla Soup

Ingredients
1 large carton chicken broth (aprox 4 cups)3 boneless, skinless chicken breast halves cut up into bite size pieces.1/2 large onion, chopped3 carrots, chopped2 small/med zucchini chopped1 cup frozen corn (Trader Joes fire roasted if you can find it)1/2 tsp ground cumin2 cloves garlic, minced1 8oz can tomato sauce2 16 oz cans diced tomatoes, undrained1 4 oz can diced green chilies2 tbsp dried parsley1 tsp dried oregano6 oz tortilla chips, divided1 tbsp canola oil
Directions
Saute onion, garlic and cumin in oil until soft. Add in chicken and broth to pan and bring to a boil. Let chicken simmer until cooked through, about 15 minutes. Add in cans of sauce and diced tomato, green chilies, zucchini, carrots, corn, chili powder, parsley, and oregano.
Let simmer about 45 minutes or until veggies are tender and flavors have developed.
Divide chips into 6 bowls and ladle soup over chips.
Add cheese or sour cream for garnish (not counted in Nutritional info)

Because of a posters comment to only use one can of tomatoes, I did the same...but next time I will use the second can :) I like a lot of red in my tortilla soup...I ended up garnishing it with salsa, cheese, and sour cream!!
