2 cups-Summer Squash - cooked and drained1 cup - Onions, cooked with squash1/2 cup ButterI pkg Mexican Style Cornbread Mix 1 can Cream of Mushroom 2 eggs
Bring sliced squash and onion to a boil, drain. Add other ingredients and mix well. Pour into 9x13-inch casserole pan, bake uncovered at 425 degree for 45 minutes. 8 - 1 cup servings
***You could also add chicken just add the Nutrition Facts. Serving size is 1 cup without the chicken

Ruthie, this sounds great! I've got everything except the cornbread mix. Adding this to my T'giving menu!
I DID make it for T'giving and y'all gotta try this! I added a tsp of ground sage and 1/2 tsp black pepper to it. couldn't find mexican c'bread mix so used jiffy. Still good! A def keeper! - 11/13/08
