Low Fat, Low Carbs No Bake Oatmeal Cookies

4 tablespoons cocoa 2 tablespoons canola oil 1 teaspoon vanilla 1 cup splenda1/2 teaspoon salt 1/4 cup fat free milk1 1/2 cups oatmeal
Mix cocoa, milk, oil, splenda, and salt in a saucepan. Boil for 3 minutes. Stir the mixture while it boils. Remove from heat. Stir the oatmeal and vanilla into the mixture. Place spoonfuls onto a cookie sheet or onto a large plate. The cookies are ready to eat when they are cool and hard.

I don't eat Oatmeal on a LC diet. I have a similar recipe that is delicious and leaves out the oatmeal. This may work for someone not as strict as myself, or someone who is able to eat a higher carb level. In all fairness (I am not rating the recipe) didn't make, due to higher carb level. - 2/4/09
