Soup - Sausage and Kale

14 oz pkg spicy sausage1 whole onion, chopped3 potatoes, with skin, cubed1 quart chicken or other stock2 quarts water12 oz fresh kale, chopped (I used 169g)1 T dry onion soup base2 chicken bouillon cubessalt and pepper to taste
Spray soup pot with oil spray. Saute onions, sausage, until onions tender. Cube potatoes while onions are cooking. Add potatoes, add water, dry onion soup base, bouillon cubes, chicken broth. Simmer for about a half hour until potatoes are tender. While simmering, coursely chop the kale. When potatoes are tender, add kale, salt and pepper to taste, cook another 5-10 minutes until kale softens. Makes approx 12 cups soup.
