Seaweed Soup

one medium head of bok choione onion1 cup chinese pea podsone small crooked neck squash1 cup of button mushrooms1 cup of bean sprouts1 cup of zuchini (opptional)two chicken breasts1 package of fresh chinese noodles2 to 3 cloves of garlic2 to 3 sheets of dried seaweed1 T of apricot oil, (any oil will do)water to cover
I chop the chicken and satee' it with the garlic and oil. Then I add the chopped bok choi, onion, and squash. When that cooks down, I add the mushrooms and water. after the soup has simmered for an hour I taste to make sure it is salty enough, if not I add a little sea salt. Then the package of noodles go into the boiling water, last the bean sprouts.
When the noodles are soft, the soup is done.
I freeze half of it and eat the rest.
We like it with a loaf of italian bread.
Its a very good comfort soup.
