Persimmon Cookies

1 tsp baking soda1 cup pulp of persimmons (hachiya)1 cup sugar1/2 cup shortening1 egg1 1/2 to 2 cups flour1/2 tsp salt1/2 tsp cinnamon1/2 tsp cloves1/2 tsp nutmeg1 cup nuts (I like pecans)1 cup raisins
Cream shortening, sugar and egg. Make pulp by peeling the persimmon and then blending the fruit in the blender. Add soda to pulp and then add to sugar mixture. Sift dry ingredient together and add to sugar mixture. Stir in nuts and raisins. Drop by spoonfuls onto greased cookie sheet. Bake at 350 for 10-12 minutes.
Makes roughly 3 dozen.
