Blackened Catfish

Ingredients
4 catfish fillets2 tbsp paprika1 tbsp ground oregano1/2 tsp garlic salt1/2 tsp fresh ground pepper1/4 tsp ground cayenne pepper2 tsp extra virgin olive oil
Directions
Mix oil and all spices.
Pour over fish fillets.
Marinate in the refrigerator for 2-4 hours.
Grill to blackened perfection.

    blackened is a technique in high heat cooking.the item is only cooked for a few min.per side and it's the seasonings that get seared or blackened.It's not the same as burning a item till it's crusty and nasty.paprika blackens quickly and can get bitter so don't over cook the product...Chef Jim - 9/27/08

    Loved this recipe. It was my first time making blackened catfish, and I made it on the grill. Incredibly easy and fast. Like any recipe, you'll probably want to adjust the seasoning to taste, but this provides a superb starting point. - 8/9/10
