Slow Cooker Potato, Ham, and Onion Soup

Ingredients
4 Medium Potatoes (Yukon Gold),diced2 Medium Vidalia or Yellow Onions,diced1 cup ham, diced2 cans of chicken broth1 red pepper, diced1 cup of skim milk1 cup of ricotta cheesesalt and pepper to taste
Directions
Prep all vegetables and add to slow cooker along with ham and chicken broth. Let all ingredients simmer for 7 hours on low setting, then add milk and ricotta cheese. Mix well and simmer for one more hour. Add salt and pepper to taste. This soup will be very thick and hearty-almost stew-like. For a thinner soup add more milk. This recipe makes 4-one and a half cup servings.
