Sweet Potatoes topped with Maple-Glazed Apples

Sweet potato, 3 sweetpotato, 5" longMaple Syrup, 0.25 cup (use the real stuff, please?)Brown Sugar, 0.25 cup, packed*Earth Balance Natural Buttery Spread, 2 tbspApples, fresh, 2 medium (2-3/4" dia) Nutmeg, ground, 1 tspCinnamon, ground, 1 tbsp
Peel & dice sweet potatoes to uniform size. Add to a pot of boiling water. Boil over medium high until sweet potato pieces are easily pierced with a fork (tender). Remove from heat and drain.
Return sweet potatoes to a hot pot and mash with earth balance, brown sugar, and spices. Spoon mashed sweet potatoes into oven-proof serving dish. Preheat oven to 350 degrees.
Remove apple cores and thinly slice, with peel remaining on. As they are sliced, drop them into a bowl with maple syrup to coat. Place apples atop mashed sweet potatoes in a decorative manner, much like an apple tart. Bake for aprpoximately 20 minutes or until apples start to glaze brown and smell fantastic. Serves 6 healthy portions.

I only needed to use one large apple. Since there was so much syrup left over, I dumped in 1/2 cup of chopped pecans and coated them, then placed that on top of the sweet potatoes and apples. SPECTACULAR! Can't wait for my family to try this today! It looks and smells wonerful.

Noteworthy, that's an awesome idea! I love pecans and it would add a healthy amount of protein and good fats to the dish. Would you mind if I altered the recipe with your addition?
