Unbelievable Fried Zucchini

3 medium zucchini, cut into 1/8 inch thick round pieces1/2 cup italian seasoned dry bread crumbs1/2 cup grated Parmesan cheese2 tsp garlic powder1 tsp parsleypepper to taste2 eggs, beaten2 Tbsp. Canola Oil
1. In a medium bowl mix together the bread crumbs, parmesan cheese, garlic powder, parsley and pepper. Dip zucchini rounds in egg, then in bread crumb mixture to coat.
2. Heat oil over medium heat. When the oil is hot, working in batches fry the zucchini until they are golden brown on both sides and tender, about 3 minutes.
3. Transfer zucchini to paper towels to drain.
4. Arrange zucchini on a plate sprinkle with a pinch of parmesan and serve hot or at room temperature.
