L.R. blueberry muffins with oat bran and flax

Ingredients
1-1/2 cups whole wheat flour1 cup oat bran1/2 cup ground flax seed1 cup sugar1-1/2 T. baking powder3/4 tsp. salt3 eggs2-1/4 cups buttermilk2 T. oil1-1/2 tsp. lemon extract2 cups fresh or frozen blueberries
Directions
Preheat oven to 375. Spray 24 muffin cups with non-stick spray. In a large bowl, combine all the dry ingredients. In another bowl, whisk together the wed ingredients. Stir the wet into the dry just until moistened. Stir in blueberries. Divide batter among the the muffin cups. Bake for about 20-25 minutes or until done. Makes 24 servings.

    I had to make a few substitutions, based on what I had on hand (i.e. juice from one lemon; 'homemade' buttermilk [low fat milk and white vinegar]; Splenda, instead of sugar). These muffins are terrific, though, and a wonderful use of blueberries, when they're in season. Yum! This recipe's a keeper!! - 6/21/09
