Cornbread Stuffing with Jimi Dean Sausage and Pecans

2 - 6 oz bags of Mrs. Cubbison's Corn Bread Stuffin (seasoned corn bread)1.5 cups chopped celery1 cup chopped onion2 tbls poultry seasoning (optional)1 cup butter1.5 cup chicken stock/broth1 cup chopped pecans1 lb Jimi Dean Sausage (regular flavour) Pam cooking spray
Preheat oven to 350
Spray 13x9 casserole pan with Pam
Brown 1 lb of Jimi Dean sausage, crumble finely while cooking, then drain. Saute onions and celery in 2 tbls of butter til transluscent. Add poultry seasoning to saute pan and cook for one minute more. Combine stuffing and vegetables with melted butter. Toss in nuts and sausage. Stir in broth gradually, lightly blend. Place in casserole pan. Bake covered 30 min. Remove foil and cook for 15 min more.
Enjoy in small quantities!
