1 cooked chicken breast, chopped14 oz whole wheat penne pastacherry tomatoes approx 2 cups1 cucumber, chopped1 red pepper, chopped1/2 red onion, choppedKalamata olives (you choose the amt)1/2 cup olive oil1/2 cup lemon juice2 tsp dried basil (or Tbsp fresh)2 tsp dried oregano (or 2 Tbsp fresh)1/2 tsp salt1/2 tsp pepper4 oz feta cheese
Boil the pasta. Mix dressing ingredients. Add drained pasta, chicken, and remaining veggies. Just before serving add feta cheese

This was really delicious! I used 4 - 5oz chicken breasts though, so the breast in the menu must be a large double or something. You get 10 servings for the recipe, so I would guess that the servings are 1 cup. 1 cup servings are a good rule of thumb anyway. Thanks for the recipe! - 7/9/09
