Alter Idem's No Box Healthy Harvest Mac & Cheese

Ingredients
6 oz Healthy Harvest pasta2 Tbsp unsalted butter1 1/2 cup 2% milk1 Tbsp Wondra Quick Mixing flour (can use all purpose, Wondra works best)1 1/2 cups shredded sharp cheddar cheesePepper to taste
Directions
Boil pasta according to package directions


Roux (while pasta is boiling):
In small saucepan, melt butter over medium heat. Add flour slowly while stirring to make a paste. Once flour is mixed, add pepper if you would like, then add milk a little at a time while stirring. Once milk is warming, add shredded cheese. Stir until cheese is melted. Should form a thick gravy-consistency sauce.


Combine pasta and cheese sauce in a square glass cake pan or small casserole dish that has been sprayed with Pam (saves a lot of work on cleanup). Bake at 350*F until bubbly, about 20 minutes. Longer if you like a crisp crust.


This recipe is not a science. All measurements are what worked for me today. Sometimes you need more milk, sometimes less butter, sometimes more cheese. Feel free to experiment.

    This is how my mother made mac & cheese when I was young. I don't make it very often now, because of the calorie count. For a occasion treat it would be very tastie. I think I will make it again soon. The only difference I would make, would be to add very fine bread crumbs to the top of it. - 11/23/08

    It does sound simple and delicious but at those calories it needs to remain a 4 serving occasional side dish or a protein substitute for a meatless meal for 4 people. - 11/22/08
