Low-fat Vegetarian Pea Soup

Ingredients
2 cups dried split peas8 cups water1 cup peeled sliced carrots1 cup chopped onion3 stalks celery chopped3 cloves garlic, minced2 tbsp chopped parsley1tbsp chopped oregano1 tbsp ground black pepper1 tsp saltcooking spray
Directions
Combine peas & water in a pot. Bring to a boil. Cover & reduce to a simmer. Cook for 20 minutes.
Spray a pan with cooking spray. add chopped vegetables & garlic. Cook until tender.
Add cooked veggies & spices to pot with peas. Cook additional 10 minutes. Reduce to low & puree with hand-held blender. Cook additional 10 minutes on low.
Serve
