Chilled Mushroom Salad

Ingredients
8 ounces fresh mushrooms, slicedLemon Vinaigrette:2 tablespoons olive oil3 tablespoons lemon juice1/4 teaspoon tarragon1/4 teaspoon sugar1/4 teaspoon saltParsley, optional garnish
Directions
In a small bowl, mix together the ingredients for the lemon vinaigrette. In a larger bowl, toss mushroom slices with vinaigrette. Garnish with parsley.

Makes 4 (2 oz.) servings.

    added 1/4 red onion, chopped, and substituted basil and thyme for tarragon, as I am not fond of tarragon...a nice side dish. It's good as a salad as is, or serve on a lettuce leaf with tomato wedges and cracked black pepper...yum! - 2/16/08
