Chicken Flautas

Ingredients
* Chicken Breast, no skin, 2 breast, bone and skin removed (remove) * Onions, raw, 1 cup, chopped (remove) * Garlic, 2 cloves (remove) * *Enova,(soybean oil and canola oil), 1 tbsp (remove) * Cheddar or Colby Cheese, Low Fat, 2 cup, shredded (remove) * Corn Tortillas, 12 tortilla, medium (approx 6" dia) (remove)
Directions
Boil chicken for 15-20 minutes or until cooked. Meanwhile, mince onion and garlic and saute over low heat for about 5 minutes. Add shredded chicken with salt and pepper to taste. Mix well, remove from heat and stir in the cheese. Before rolling tortillas, soften them by wrapping in microwave safe film and heating microwave on full power for @ 30 seconds. Place a spoonful of chicken filling on a tortilla and roll to make a neat cylinder. Secure with toothpick. Pour oil in a frying pan to depth of 1 inch. Heat until a small cube of bread when added rises to surface and bubbles at edges before turning golden. Fry flutes for 2-3 minutes, turning frequently. Drain on paper towels and serve immediately with salsa.

    I left out the cheese to lower the fat, and used regular oil, but otherwise followed the recipe. The flautas were terrific! - 5/17/16
