South Beach Cheddar Mashed Cauliflower

Ingredients
1 bag of Cauliflower 1/2 Cup of skim milk1 Cup of 2% shredded cheddar1 tsp garlic
Directions
Steam or boil cauliflower.

Add cauliflower, milk, cheese, and garlic to food processor (blend it all together).

Transfer to baking dish. Bake at 350 for 30 minutes.

Add salt and pepper to taste.

    I made these last night. Instead of using milk and cheddar though, I used 1/4 cup of light sour cream, 3 tbs smart carb butter, 1/4 cup of mayo and parmesean. I also didn't bake it for 30 minutes afterward. My whole family loved it and my husband even said he preferred it to mashed potatoes! - 3/4/12
