Bean Cookies

Ingredients
2C Oatmeal (blended)1C Whole Wheat Flour1t baking powder1t baking soda1/2C brown sugar1/2C ground flaxseed1 can white kidnet beans (pureed)1/4C margarine or butter1C chocolate chips
Directions
Blend everything together and scoop with a small cookie scoop onto cookie sheet covered with parchment paper. Flatten cookie slightly and bake for 10 - 12 minutes or until lightly browned on bottom. Bake @ 350F

    These were very good! A little salty, even though I rinsed the beans off really well, and I wasn't sure about the oatmeal. In the ingredients details it says cooked? I just added oats right out of the canister. In my opinion, they taste pretty darn close to regular old oatmeal/choc chip cookies. - 6/27/09
