Ingredients
1 Tbsp Extra Virgin Olive Oil1 Small yellow squash1 small onion3 cloves garlic3 plum tomatoes1 red pepper 2 celery stalks2 Tsp. Thai Sweet Chili Sauce
Directions
Heat Medium saucepan with 1 tbsp extra virgin olive oil. Chop all ingredients throw into the saucepan and cover. Cook until veggies are just about tender and add 2 tsp of the Thai Sweet Chili Sauce. Serve over rice, pasta, or just as a side dish. I served it on a bed of lettuce with a mozzarella cheese stick. Yummy!
