broccoli mushroom cheese stuffed potatoes

4 potatoes baked.50 cup broccoli chopped cookied1/3 cup mushroom cooked4 tblsp bacon bits3 oz velveeta light cheese1/3 cup nonfat milksalt & pepper to taste
wash potatoes poke with fork and cook in microwave
while potatoes cook heat saute pan spray with cooking spray and saute mushrooms when almost cooked add broccoli and continue cooking set aside
in small sauce pan heat milk and add cheese stir until melted set aside
once potatoes are done remove from microwave and cut open carefully scoop out potatoes and place in pan with veggies combine together season with salt and pepper to taste scoop back in potatoe skins place 2 1/2s on each plate and divide cheese sauce among each potatoe 1/2 and top with 1 tblsp bacon bits
serve and enjoy
