Vegan Moist pumpkin bread

Ingredients
3 cups flour2.5 cups packed brown sugar2 tsp baking soda1 tsp salt2/3 c lite coconut milk1/2 vegetable oil (or substitute apple sauce)2 cups pureed pumpkinSeason to taste w/cinnamon, nutmeg, cloves, and ginger
Directions
Combine dry ingredients in large bowl. Add wet ingredients and mix.

Preheat Oven to 350

You can do this in 2 loaf pans - 1hr and 10 minutes

or in muffin tins - 25 minutes

Makes approximately 2 loaves or 28 muffins
