Savory Acorn Squash

Ingredients
1 acorn squash2 tbsp I can't believe it's not butter lightsalt and pepper
Directions
Serving size: Half of squash

Cut acorn squash in half (sometimes it helps if you make a few knife holes along where you are planning to cut and then microwave for 2-3 minutes just to get it cut!)

Scoop out seeds.. place 1 tbsp of "butter" in each half and sprinkle with salt and pepper.

These normally fit in an 8x8 pan for me, I bake face up and I put water in the bottom of the pan and cover with foil.

Bake at 350 for about 45 minutes or until desired tenderness.
