Parmesan Skin-On Smashed Potatoes

Ingredients
* 3 very large Idaho Potatoes * 4 Tbsp Unsalted Butter * 1/4 cup grated Parmesan Cheese * 8 Tbsp Daisy Light Sour CreamSalt and Pepper to taste
Directions
Makes 8 servings

Cut potatoes into chunks and simmer in water until fork tender.
Drain. Begin to smash with a potato smasher tool, adding the remaining ingredients as you go to form your desired consistency.
Add salt and pepper to taste!
