Super Chicken Salsa Soup

Ingredients
2 chicken breast halves (I used leftover chicken) cut into bite size pieces1/3 cup diced onionsCooking spraygarlic powder and chili powder to taste1 cup salsa (I used my homemade salsa)1/2 cup uncooked long grain rice (or 1-1/2 cups cooked rice)3 cups water1 oz tortilla chips1/4 cup shredded cheddar cheese
Directions
Coat bottom of a good sized sauce pan with cooking spray (I used olive oil spray). Brown chicken pieces and diced onions. Add garlic powder and chili powder to taste. Add 1 cup salsa, three chicken bouillon cubes, three cups water. Do not add salt as bouillon cubes have plenty - you may want to use low sodium cubes.
Simmer for approximately 10 minutes then add 1/2 cup uncooked rice and cook for 20 more minutes. If you have leftover cooked rice you can add it and simmer for just about 10 more minutes to make sure the flavors are absorbed. Serve with a sprinkling of broken tortilla chips and a little shredded cheese on top. Makes approximately 6 cup size servings or 3 bowls.
