Peppermint Chocolate Chip Meringues

Ingredients
2 egg whites1/8 teaspoon salt1/8 teaspoon cream of tartar1/2 cup white sugar2 peppermint candy canes, crushed1/2 cup mini chocolate chips
Directions
1. Preheat oven to 225 degrees F (110 degrees C). Line 2 cookie sheets with foil.
2. In a large glass or metal mixing bowl, beat egg whites, salt, and cream of tartar to soft peaks. Gradually add sugar, continuing to beat until whites form stiff peaks. Carefully fold in crushed candy canes and chocolate chips. Drop by spoonfuls 1 inch apart on the prepared cookie sheets.
3. Bake for 1 1/2 hours in preheated oven. Do not allow them to brown. Turn off oven and let the meringues sit in the oven to dry out overnight.

    This is similar to an old family recipe that has been around for over a hundred years. We call them "cloud cookies" because of how they look when they are finished. I love chocolate and mint but I have never tried it with mint. Our cookies consist of pecans and chocolate chips instead. Awesome Recip - 12/12/08
