Lowfat Banana Muffins

1 2/3 c. whole wheat flour 2/3 c. sugar 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. ground cinnamon 1/4 tsp. salt 1 c. mashed very ripe bananas (2 to 3 medium) 3 egg whites 1/4 c. unsweetened applesauce1/4 c. 1% milk 1 tsp. vanilla extract
1. Heat oven to 375 degrees. Grease muffin pan with cooking spray or line with paper baking cups.
2. In small bowl, mix flour, sugar, baking powder, baking soda, cinnamon and salt.
3. In large bowl, beat bananas, egg whites, applesauce, milk and vanilla until smooth. Stir flour mixture into wet mixture just until flour is moistened. Divide batter evenly among muffin cups.
4. Bake 20 to 24 minutes or until tops are lightly golden and toothpick inserted in center comes out clean. Immediately remove muffins to cooling rack
