Mommy's Special Spaghetti Sauce

3 tbsp Extra Virgin Olive Oil5 Garlic Cloves, crushed1 tsp dried Basil 1 tsp dried Oregano1 can (13 fl oz) Tomato Paste 3 cans (28 fl oz cans) Diced Tomatoes1-2 cans (28 fl oz can) Water2 tbsp Low Calorie Sweetener (Splenda)Optional: Vegetables, ie: peppers, onions, mushrooms etc...Meats ie: Italian Sausages, meatballs or stewing beef (may require extra cooking time if added raw)
Prior to turning on the heat I find it useful to have all of the cans opened and ready to be poured. Timing this correctly usually helps prevent the garlic from browning (burning).
1. Heat Olive oil in large (stock) pot on med-low heat (3).
2. Saute garlic. Do not allow to brown.
3. Add oregano and basil and stir.
4. Add the tomato paste. Mix well.
5. Pour in the diced tomatoes and can of water. (Water is added to boil off and allow the sauce to thicken). Stir.
6. Add the low calorie sweetener (Splenda). (This helps to reduce the acidity of the tomatoes. Equal amounts of white sugar can be used if you do not want or have low cal sweetener)
7. Allow to simmer, stirring often on low heat for a minimum of 1 hr to allow the sauce to thicken as desired and keeping in mind that any meat added needs to be cooked thoroughly.
This recipe yields approx. 12 1-cup servings.
