Portabella and Eggplant Pizza ( or any Veggies!!)

Ingredients
8 baby bellas sauteed w/ small diced onion in balsamic vinegar and pam1 c eggplant sauteed in pam2c marinara1/4 c lowfat monterey jack shredded1/4 c part skim mozzarella shredded1/4 c lowfat cheddar shredded2 pkgs pizza dough( just add water kind)
Directions
Prepare crust according to package- let sit 5 minutes Divide into 2 sections
Saute onions until carmelized add mushrooms and balsamic until just cooked remove from pan
Saute eggplant in pam until cooked through.
Roll out dough onto cookie sheets
Spread about 1 cup of sauce on each
Spread Veggies between 2
Spread cheese evenly
Bake at 400* for about 12 minutes
Enjoy!!! Yummy! Makes 16 slices!!!
