Low Calorie Pumpkin Butter

* Pumpkin, cooked, 6 cup, mashed * Splenda, 2 cups * Alpine spice low-calorie cider mix, 2 packets plus 2 cups water * Pumpkin Pie spice, 2 tbsp (or a mix of 4 tsp ground cinnamon, 2 tsp ginger, 1 tsp nutmeg, 1/2 tsp allspice, 1/2 tsp cloves)Salt, 1 tspVanilla Extract, 1 tsp
Mix all in a lare pot and bring to a boil, then simmer uncovered, stirring often, for 30-40 minutes or until as thick as you like it. this makes about 10 cups, 160 1 Tbsp servings. Be ready to can it in jars, share it with friends, and store in the fridge for several months.

This did not come out to be 10 cups--more like 6 after it is cooked, so adjust the calorie count. It was probably the pumpkin I used or the cider mix, but mine had a unpleasant flavor. I will try with canned pumpkin next time and see. Easy to make--thanks for sharing it!! - 9/26/09

I think you'll have better luck with the canned pumpkin, as you'll not need to let it boil down quite so much. Certainly keep tweaking it, as I love mine every year! Best of luck!
