Curried Squash & Green Apple Soup

3 cups fat-free, less-sodium chicken broth2 cups chopped onion (about 1 large)2 teaspoons bottled minced garlic1/2 teaspoons grated peeled fresh ginger1 teaspoon salt1 teaspoon red or yellow curry powder1/2 teaspoon ground coriander1/2 teaspoon freshly ground black pepper3 cups cubed peeled butternut squash2 medium green apples, cored, peeled, and diced (approx. 1 pound, 2 cups)
Combine all ingredients in an electric slow cooker. Cover and cook on low for 8 hours or high for 4 hours until squash is tender.
Place half of squash mixture in a blender, and process until smooth. Pour pureed mixture into a large bowl. Repeat the procedure with remaining squash mixture. Or you can use an immersion directly in the crock pot.
