* Potato, raw, 1 large (3" to 4-1/4" dia.) * Olive Oil, .333 cup * Pepper, black, 1 tsp * Parsley, 1 tbsp * Basil, 1 tbsp
1. Preheat oven to 375
2. Place potatoes in shallow roasting pan
3. Combine oil and herbs, drizzle over potatoes. Toss to coat
4. Bake uncovered for 1 hr - until fork tender
5. Turn occasionally to prevent sticking
