Avocado and chicken gratin

• 1 avocado, diced • 350g (12oz) cooked chicken, diced • 150ml (5fl oz) light fat natural yoghurt• 3 - 4 tablespoons extra light mayonnaise • 1 - 2 teaspoons curry paste • 55g (2oz) breadcrumbs • 25g (1oz) flaked almonds • 1 tablespoon olive oil
1. Place the avocado in an ovenproof dish and cover with the chicken.
2. Mix together the yoghurt, mayonnaise and curry paste to taste.
3. Spoon evenly over the chicken.
4. Combine the breadcrumbs and almonds and sprinkle over the dish.
5. Bake in pre-heated oven 180°C, 350°F, Gas 4 for 20 - 25 minutes until golden brown.
6. Serve with a mixed green salad.
