Veggie Meat-Loaf

Ingredients
1/2 cup dry lentils, cooked1 tbsp olive oil1 medium onion, diced1 1/2 cups whole mushroomsscant 1 c. fresh broccoli florets, steamed1/4 cup rolled oats1/4 cup cooked lima beans.25 cup cooked leek, chopped finely1/2 cup tomato sauce1 medium stalk celery, chopped1/3 cup shredded carrotGRAVY: 1/2 cup mushrooms, diced1 c. veggie broth1/2 cup milk1 tbsp brown rice flour1 tbsp potato starch1/2 tbsp honey1 tsp apple cider vinegarpepper and salt
Directions
For the gravy: Heat a tsp of olive oil in a skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, about 5 minutes. Season mushrooms with salt and pepper to taste. Scatter the flour over the mushrooms and stir until lightly browned, about 1 minute. Add the cider vinegar, honey, and broth and bring to a boil, cooking until thickened, about 2 minutes. Add the milk and starch and season with salt and pepper.
