Zesty Black Bean Chicken Bake

Ingredients
(2) Boneless Skinless Chicken Breasts 1 can of black beans (drained and rinsed)1 can of Rotel diced tomatoes with lime juice and cilantro1/4 cup of diced onion1/2 tsp of ground cumin1/2 tsp of garlic powder2 tsp of minced garlic ( garlic powder works fine as well)1/2 packet of McCormick Taco Seasoning2 tbsp of chicken broth2 tbsp of cheddar cheese*Optional- Add a tsp of light sour cream to each chicken breast with a sprig of cilantro for added flavor and visual interest!ADDTIONAL IDEA: This dish would also make a great base to a soup. Simply boil chicken breasts in water and cut into cube size pieces and add more chicken stock and seasoning.
Directions
Preheat oven to 350 degrees.

1. Place 2 chicken breasts in an oven-safe dish and sprinkle onion salt, garlic powder over each breast.

2. In a small bowl, mix 1 can of black beans, 1 can of diced tomatoes and garlic. Pour over chicken.

3. Surround chicken with a 3/4 cup of chicken broth.

4. Cover with foil and bake at 350 degrees 45-60 minutes.

-->NOTE: The cooking process always depends on the thickness of your chicken. This recipe is based on 1/2 inch thickness.

5. The last 10 minutes of baking, remove the foil and sprinkle with 1 tbsp of cheddar cheese, return to the oven and bake until chicken is no longer pink and juices run clear.

Serve with whole-grain rice or a nice green salad.
