HERB POACHED SHRIMP WITH COCKTAIL SAUCE

Ingredients
1 pound large shrimp (16-20 count), peeled, deveined and rinsed, shells reserved1 teaspoon salt1 cup dry white wine4 peppercorns5 coriander seeds1 bay leaf5 sprigs fresh parsley leaves1 sprig fresh tarragon leaves1 teaspoon fresh lemon juiceCocktail Sauce:1 cup ketchup2½ teaspoons prepared horseradish¼ teaspoon salt¼ teaspoon ground black pepper1 teaspoon ancho or mild chili powderPinch cayenne pepper1 tablespoon fresh lemon juice
Directions
1. Bring reserved shells, 3 cups water, and salt to boil in medium saucepan over medium-high heat; reduce heat to low, cover and simmer until fragrant, about 20 minutes. Strain stock through sieve.
2. Bring stock and remaining ingredients except shrimp to boil in large saucepan over high heat; boil 2 minutes. Turn off heat and stir in shrimp; cover and let stand until firm and pink, about 8-10 minutes. Drain shrimp and plunge into ice water to stop cooking; drain again. Serve shrimp with chilled cocktail sauce.
