Put Chicken (ground), Scallions, Basil, Soy Sauce, Lime juice, garlic, sugar and Thai Chili Sauce in a bowl blend very well and sit overnight. Chop shredded carrots, ends of scallions and peanuts for the next day. Right before serving, add EVOO and Sesame seed oil and cook mixture on Med High heat until cooked. Prepare lettuce for individual cups, add peanuts, carrots and scallions to mixture once cooked and serve immediately.
